Campfire Dip

This has become one of our favorite appetizers. We started making this when we lived in Ventura, CA and we would camp at the beach. It never disappoints and it takes just 5 minutes to whip up.

Layer the following items in a greased cast-iron pan or a pot that can be placed on a fire-grate or on the grill in this order:

  1. Half a can of Black Beans
  2. Shredded Cheese
  3. Salsa (our favorite is the Serrano Salsa from Trader Joes)
  4. Half a can of Refried Beans
  5. Chopped Cilantro

Repeat with a second layer in the same order. Cover with foil and warm over the fire or on the grill. Serve with tortilla chips right out of the hot pan.
